My life has been changed by bacon.

I love Saturday mornings. Correction, I love about half the year where my husband doesn't have to work on Saturday mornings. But nevertheless---they are good.

We used to go out to breakfast a lot pre-baby. It was our thing. We really don't do it that much anymore with Emeline because it's just easier and more cozy to stay in pj's and make breakfast from home now. So, we kind of have a home-tradition of Saturday morning pancakes.

We turn on music. Declan makes the pancakes & coffee. I make the bacon. Eme hangs around munching on strawberries & playing with random objects at our feet to keep busy while waiting for breakfast. It's a grand time. I love it.

Some mornings, when trying to coax our picky eater into eating the sugar-ridden pancakes (seriously, kid? You won't eat PANCAKES?), we make them into fun shapes. Today we made her a creepy Mickey and seriously? She wouldn't even eat that? The nerve.

But. I'm here to tell you today that I have finally tried the new way of cooking bacon that a bunch of you suggested when I mentioned my bacon-cooking-woes before. And? My life is changed. For real.

My bacon-making used to make my kitchen smoky. I used to get burned by the grease bubbling up. I used to smell bacon-smell in my house for days after. It was gross. Granted, I'm not good at this whole cooking thing as it is.

So I baked my bacon today, and? Totally amazing. No mess. Easiest thing I've ever done. It was just as delicious, if not better than my stove-top/skillet bacon. I will never go back. I followed this ridiculously easy way to do it. I am a convert.

You must try it, too. And thank you to those of you who suggested this to me. I'm indebted to you:)

  7. We always bake our bacon (although I swear our house still smells like bacon all day). Next time, save the grease and fry your eggs in it. It'll rock your breakfast world.

  8. We only eat turkey bacon so I usually do it in the pan. I know healthy - blech. But when we do make real bacon I love to bake it, plus the tasty smell in the house lasts longer.

  11. I always do my bacon in the oven, too! It is much safer with curious little chef wannabe's in the kitchen.

    Now if only cooking bacon didn't stink up the house, we'd probably eat it everyday!

  13. Baking the bacon is the best and easiest clean up. I always make a bacon lattice for egg sandwiches so it doesn't move!

  14. YES! I LOVE baked bacon! It makes the place smell amazing, the pieces don't shrink, and the cleanup is easy! You do have to wait longer than say, making it in the microwave, but IT IS SO WORTH IT.

    Mmmm bacon! <3

    Also, I'd have been all over that pancake. It looks yummy! One day she'll get it.

  21. I've been baking my bacon for along time just for that reason. :) BTW Avoid turkey bacon because its actually less healthy than regular bacon due the processing it must go through to become bacon. My hubby is not a pancake fan so I'm jealous of your pancakes since we rarely have them.

  23. I've never cooked bacon like that, but I like the idea of not scalding yourself with hot bacon grease!! You can also put bacon on a glass dish/plate/just not anything plastic with a paper towel under and on top of the bacon and microwave for 1 minute per piece of bacon. The paper towels prevent the grease from getting all over the place and you aren't left with limp, greasy bacon. It works when you're in a hurry!
